Apple Breakfast Cookies

Cookies + Breakfast = Amazingness.

Cookies + Coffee in the morning = Even more amazingness, in my opinion.

We are traveling to Chicago this week to spend time with my husband while he is working this week. I always have to prep some food to bring with us when we travel, since my daughter has Celiacs and needs to be very careful with her food. We cannot just swing into any restaurant for a bite to eat, so I always need to have something for her. We also will not have a kitchen in our hotel room, so I needed some things that I can just grab and eat for them.

Breakfast bars in the grocery store may taste great, but many are actually just dressed up versions of a candy bar. Plus, they cost a small fortune!

I have made some granola bars, and I have some Shakeology balls for snacks. Muffins would be great, but honestly, I just haven't found a good gluten free muffin that is healthy and my kids love.

So far, they LOVE these! They are gluten free, vegan, and do not take much time to prep at all. They are a little more involved then your typical muffin, but worth the small additional effort.

The main ingredients are bananas, applesauce, peanut butter, flax seed, honey or agave, oats and pecans.

You will have to purchase milled Flax Seed, or just mill it yourself. I use my coffee grinder, but you could use your blender if you want, it just might take a little more effort. You will also need to use your blender for some of the oats and pecans.
