Vegan Butternut Squash Chili

I do not know if I am asked for a recipe as much as I am asked for this one.

Because, it is SO good.

But, I have no photo of the actual recipe. I guess because we eat it too quickly? So this will have to do. Minus the black beans. I'm sure I'll make it again and update soon.

And, it makes a lot of food, so it is a favorite of mine, because it is like two meals in one.

A few tips- before you try to slice your butternut squash, put it in the microwave and heat it for 2 min. You can much more easily slice it in half for roasting. Also, roast this the night before and then put it in the fridge. Then when you go to slice it later it will be cold and much easier on the hands.

This recipe is definitely not just for Vegans- it is rich, flavorful, and the beans and quinoa give it a good amount of protein without the added meat. So give youself a break from the meat, and try it out!
