[Healthy] Peanut Butter Cups

With Halloween coming up, I have been thinking about some healthy candy options I could use for my current Fall Into Fitness Challenge Group, and for my own family.
The choice was simple really- Peanut Butter Cups. My husband could devour a single bag in a matter of a few minutes. Honestly. I call it marathon eating. Wow.
I starting searching for a recipe already created, but every recipe I could find used large amounts of sugar still. I did not want to add sugar, and I like my recipes to include things that people can find at almost any grocery store.
My problem was that I needed to sweeten my peanut butter AND get the consistency correct. It needed to stick together, so I could then dip it in chocolate.
You need a food processor to make these. Because I decided to use Chickpeas as my binder. Peanut Butter, chickpeas and honey.
Who would've thought? Thankfully I had a can sitting in my pantry just staring at me, waiting to be used.
You are going to first add your chickpeas (or garbanzo beans) to your processor, and process until smooth. Then add your honey, and then your peanut butter. I actually only had crunchy on hand, and it was ok! I use organic PB, and there is nothing else in it, except the peanuts, so you may not need as much honey as I used if you are using a different kind.
From there you will have a dry, crumbly mixture. Depending on how large you want yoru PB cups, you will take by the rounded tablespoon and roll into a ball. Place the ball onto a pan lined with parchment (I was out, but this will help), then flatten them out.
You should get about 12 nicely sized PB Cups, which for me was good because I didn't need to eat more then that.
Take the flattened balls and place into the freezer for about 30 minutes. This helps them stick together when you dip them.
In a small bowl, melt 2 tbsp of coconut oil, and then mix in 1 scoop of chocolate Shakeology. You can also substitute cocoa for this as well, but I am not sure why you would want to...
Dip the frozen PB into the chocolate mixture. I used a fork, and then just placed right back onto the parchment paper. The chocolate should harden fairly quickly because of the cold peanut butter. I would store them in the fridge, or the chocolate will get soft.
